PAVLOVA

Here is the recipe for the pavlova that was mentioned on Cielo's blog, "The House in the Roses". This dessert is one of the many delicious desserts in a post titled, 'Desserts from Across the Globe.' The pavlova was named in honour of the famous ballerina, Anna Pavlova and is Australia's national favorite.

The fact that it is so disgustingly easy to make is really too boring even to mention.

Whys and Wherefores
4 egg whites - no yellow specks (fish them out) or it won't beat up stiff.
3/4 cup white sugar - to make the meringue outside and give sweetness
1/2 teaspoon Cream of Tartar - to make the egg whites stiffen up
1 and a 1/2 teaspoons white vinegar - to make it marshmallowy inside.

Hint: Don't use a plastic mixing bowl or the egg whites won't whip up stiffly.

BASIC RECIPE
4 egg whites beaten stiff
3/4 cup white sugar
1/2 teaspoon Cream of Tartar
1 and a 1/2 teaspoons of white vinegar

Method:
Add sugar to beaten egg whites and beat again
Then add Cream of Tartar and vinegar
Grease tinfoil and make a 'nest' shape with the mixture
Place in oven 125 degrees celsius ( no higher) for 1 hour
Then turn oven off and leave until oven has cooled
(It really dries the mixture out rather than cooking it.)

Whip up some cream and spoon into the meringue case and top with whatever seasonal fruit takes your fancy. Enjoy!

Dear Jo,
Here is a biscuit recipe...try it..
INGREDIENTS:

* 2 cups all-purpose flour, stirred before measuring*
* 2 1/2 teaspoons baking powder
* 1/4 teaspoon baking soda
* 1 teaspoon salt
* 1/4 cup lard or vegetable shortening, chilled
* 2 tablespoons butter, chilled
* 3/4 cup buttermilk

PREPARATION:
Heat oven to 450°. Adjust oven rack to center position.

In a large bowl, combine flour, baking powder, soda, and salt. Cut in chilled shortening and butter until you have pieces the size of small peas. Make a well in center of dry ingredients; pour in buttermilk. With a wooden spoon, gently blend dry ingredients into the buttermilk, just until mixture is clumping together. If necessary, add a few more teaspoons of buttermilk.

Transfer dough to a lightly floured board. Pat out in a circle about 8 inches in diameter and 1/2-inch thick. Using a 2 1/2 to 3-inch biscuit cutter, cut out and place on ungreased baking sheet. Bake on center oven rack for about 10 to 12 minutes, until tops are browned.
Makes 10 to 12 biscuits, depending on size of cutter.

Dear Jo,
I hope you had a great Mother's Day. We were gone all weekend and got back late Sunday night, so I am just trying to visit a little before going to sleep.
Thanks for visiting me...
I see Bindi has sent you a biscuit recipe, looks like a really good one. I will send you a sausage gravy recipe to go with the biscuits. Sausage gravy and biscuits is a southern tradition here in the States. I will try to do that this week.

Well, I must try and get some sleep...*yawn*...

Say hello to Helen and Mark for me.

Have a great week,
hugs and love to my Aussie family
